Two More Gifts for You



An extra post today -- My guest, Rebecca York, will be arriving at 6 AM (or her post will, anyway), so I wanted to offer you my next gift without encroaching on her post--which you won't want to miss, because she's doing a giveaway.

Today it's a pair of recipes for holiday munchies.



Sugary Spiced Pecans

1 egg white, slightly beaten
1 T water
3 c pecan halves
1/2 c sugar
1/2 t salt
1 t cinnamon
1 t allspice
1/2 t nutmeg

Preheat oven to 300 F

In medium bowl, beat together egg white and water. Stir in pecans, stirring until all surfaces are moistened.

Mix everything else together, then sprinkle over pecans, coating well. Spread pecans on lightly greased or foil lined shallow baking pan (I line mine with a SilPat sheet). Bake about 30 minutes, stirring once or twice to crisp and dry pecans.

Candied Pecans with a Kick

3 cups pecan halves
6 T light corn syrup
3 T sugar
1 tsp salt
1/2 tsp ground black pepper
1/8 - 1/4 tsp cayenne pepper (to taste)

Preheat oven to 325 F
Spray shallow baking pan with nonstick spray (again, I use a SilPat)

Combine everything in a medium bowl; toss to coat. Spread on prepared baking sheet. Bake until nuts are deep golden and sugar mixture bubbles, stirring occasionally to break up clumps, about 15 minutes. Cool completely on baking sheet.
